Capixaba Moqueca

=>INGREDIENTS<=
1,5 kg of fish slabs(Cammon snook,papa-terra,dorado,...).
03 mallets of coriander.
03 mallets of green chives
.
01 medium onion.
03 garlics.
04 tomatoes.
15 g of malagueta pepper(red)

100 ml of olive oil
.
10 g of urucum.
100 ml of soy oil.


=>PREPARATION<= Wash well the fish with lemon and leave it resting in a place with water lightly salted.Ground the garlic,three slices of lemon,a mallet of cut up coriander,a mallet of green chives and salt.
Fry in the mud pot the pasta obtained of in the grounder with the urucum dye and olive oil.Remove the fish slabs from the plate with water and salt.Ordain them delicately in the mud pan so they don't over place each other.Cut the rest of cut up coriander,the green chives,the tomato and the onion and spread the in this order over the fish slabs that are in the pan.Sprinkle with a little olive oil and lemon juice.
Cook for 25 minutes. Watch out so fish slabs don't get stuck in the bottom of the pan.
